The School Lunchbox Dad’s favourite pork recipes for these school holidays

School holidays are a great time to get the kids in the kitchen and on The Morning Show on Friday, School Lunch Box Dad is teaming up with his own daughter Kiki to share their signature recipes that will turn a classic roast pork into two family favourites

Kiki’s Pork Ramen

Ingredients

2 slices of Australian pork with crackling

1 egg yolk

1 teaspoon soy sauce

1/2 teaspoon crushed garlic

1 teaspoon pork bone broth

500 mills boiling water

Small bunch blanched Bok Choy

Small bunch spring onions

Small bunch blanched broccolini’s

200 grams ramen noodles

1 tablespoon dried shallots

1 tablespoon finely chopped coriander to garnish.

1 teaspoon Chili oil optional

Method

1. Pop egg yolk into base of a bowl, add bone broth, soy sauce and garlic. Gently stir, don’t whisk.

2. Add in cooked noodles, bok choy and/or broccolini. Sprinkle the dried shallots and place the two slices of pork with crackling. Garnish with coriander and start slurping.

George’s Pork Roll

Ingredients

2-3 slices of Australian pork belly with crackling

1 crusty baguette

1 cup Rocket

4-6 slices provolone cheese

1/2 cup bocconcini

1/2 cup thinly sliced purple onion, it’s purple not red ok!

2 tablespoons olive oil

1 roasted red capsicum sliced

3-4 sprigs of fresh parsley

Sauce

4 anchovies

2 crushed garlic clove

1/2 cup chopped parsley

2 tablespoon lemon juice

4 tablespoons olive oil

Method

1. To make the sauce, drop in all the ingredients into a mixing bowl and crush with a fork, mixing and pushing till it’s all combined and without lumps.

2. Lightly toast or grill the baguette for that extra teeth-breaking crunch! Slice it and add the sauce on both sides of the baguette. In this order add the provolone, rocket, roasted capsicum, onion, break apart and add the bocconcini. Add the Aussie Pork and the parsley sprigs and finally drizzle with olive oil.
