3 free range eggs
3 tablespoons honey or maple syrup, plus extra to serve
¼ cup (60ml) Olive oil
120g Plain flour

Pinch sea salt flakes
1 teaspoon baking powder
½ teaspoon bi carb soda
1/3 cup Coles mixed seeds, chopped (you can also use chopped nuts like walnuts or pecans)
60g dark chocolate, broken into shards
1 regular banana, peeled, sliced lengthways to decorate the top (optional)
Method
Step 1. Pre heat the oven to 160 degrees C and line a loaf tin with a little olive oil and baking paper
Step 2. In a large mixing bowl place the mashed bananas, yoghurt, eggs, honey and olive oil then mix until combined.
Step 3. Fold through the flour, oats, cinnamon, salt, baking powder, bi carb, seeds and dark chocolate until you have a nice thick batter. Pour the batter into a loaf tin then top with the sliced banana.
Step 4. Bake in the oven for 45-50 minutes or until a skewer inserted into the middle comes out clean. Allow to cool in the tin for 10 minutes before slicing.

EASY BANANA SPLIT
Serves 2
Prep time: 5 minutes
Ingredients
2 bananas in their skin
1 cup Greek yoghurt
1 tablespoon honey
½ cup toasted granola
½ cup blueberries
½ cup raspberries
¼ teaspoons ground cinnamon
Method
Step 1. Carefully cut the banana from top to bottom with a small sharp knife down the middle of the inside of the curve, making sure not to cut all the way through. Gently press to open up a cavity in the banana flesh.
Step 2. Spoon the yoghurt into the cavity then drizzle with honey and scatter over the granola.
Step 3. Place the berries over the granola, pressing down gently so they stay in place. Lightly dust with cinnamon then serve.
BANANA SUSHI
Makes 12 pieces
Prep time: 5 minutes
Ingredients
2 large bananas, peeled
2 sheets mountain wrap bread
4 tablespoons Nutella
2 tablespoons peanut butter
1 tablespoons desiccated coconut
Method
Step 1. Place the wrap bread onto a clean chopping board and spread one half with the Nutella in an even layer. Spread the peanut butter at the end of the side that doesn’t have Nutella on it.
Step 2. Place the banana on top of the peanut butter layer then scatter with a little coconut.
Step 3. Roll the wrap up so that the banana is wrapped tightly and the Nutella is holding it together.
Step 4. Trim the ends off the wraps then slice each wrap into 6 even rounds. Place onto a serving plate and scatter with extra coconut before serving.
